A chicken sandwich spread is quick, easy, and packed full of flavor. But sometimes, the usual mix of chicken, mayo, and relish can feel a little... well, a bit predictable. That’s why this version adds a unique twist—using sweet pears, crunchy almonds, and just a hint of Dijon mustard to create a savory yet slightly sweet spread that’s perfect for sandwiches, wraps, or crackers.
1. Cooked Chicken
The star of the show! You can use leftover roasted chicken, grilled chicken, or even rotisserie chicken for convenience. Shredded chicken works best for a creamy spread, while chopped chicken gives a chunkier texture. Choose the prep you like best.
2. Pears
Instead of apples, we’re using pears for a milder sweetness and juicy texture. Bartlett or Anjou pears work best—they’re soft, slightly tart, and blend well with the other flavors.
3. Almonds
For crunch and nuttiness, almonds are a perfect addition. They add texture without overpowering the spread. You can use toasted almonds for extra depth of flavor. See the recipe for how to toast raw almonds.
4. Mayonnaise
The binding ingredient that keeps everything creamy. If you prefer a lighter version, swap mayo for Greek yogurt or mashed avocado.
5. Dijon Mustard
A small but mighty ingredient I love adding to savory recipes! Dijon mustard adds a tangy kick that balances the sweetness of the pears.
6. Honey
Just a touch of honey enhances the natural sweetness of the pears and rounds out the other flavors.
7. Onion Powder
Adds a subtle savory note that blends well without overpowering the spread.
8. Salt & Pepper
A pinch of salt brings out the flavors, while black pepper adds a little bite.

Instructions:
1. Prepare the chicken – If using leftover or rotisserie chicken, shred or chop it into small pieces.
2. Chop the pear – Dice it finely so it blends well into the spread. You can also leave it a little chunkier if you like. However, to for a more blended result, finer is better.
3. Toast the almonds (optional) – If using raw almonds, toast them in a dry pan for 2-3 minutes until golden brown.
4. Mix the ingredients – In a bowl, combine chicken, pear, almonds, mayo, Dijon mustard, honey, onion powder, salt, and pepper. Stir until well combined.
5. Chill & serve – Let the spread sit in the fridge for about 10-15 minutes to allow the flavors to meld. Serve on bread, crackers, or wraps.
