 Ingredients:

  • 1 - 1½ lbs beef flank steak  
  • ½ cup barbecue sauce (your favorite flavor)  
  • 1 red bell pepper, quartered  
  • 1 yellow bell pepper, quartered  
  • ¼ cup garlic mayonnaise  
  • 4 French baguettes (6-inch), split & toasted  
  • 4 lettuce leaves (green or red leaf lettuce)

 Instructions:

1. Prepare the Grill  

  • Preheat a greased grill to medium-high heat.

2. Cook the Steak  

  • Place flank steak on the grill.  
  • Grill for 8 to 10 minutes per side, until reaching an internal temperature of 160°F for medium doneness.  
  • Brush with barbecue sauce in the last few minutes.

3. Grill the Peppers  

  • Grill red and yellow peppers for 2 to 3 minutes per side, until crisp-tender.  
  • Brush both sides with barbecue sauce in the final minute.

4. Assemble the Sandwiches  

  • Slice steak and peppers thinly.  
  • Spread garlic mayo on toasted baguettes.  
  • Add lettuce, followed by steak and peppers.  
  • Close sandwiches and serve immediately.
